At Thule Ventus we make award-winning salt fish that is salt and air dried, using the same methods that have been used in Shetland for hundreds of years. Our fish is from the pure waters around the Shetland Islands, landed by local boats in the early hours of the morning and salted the same day. The curing process is done by hand and takes six to eight weeks – we only stop the curing process when we feel each batch is ready.
We use koshering salt to ensure that the only ingredients are fish and salt. No phosphates, no ‘E Numbers’, no additives. With Thule Ventus, all you get is fish, salt and time.
In addition to our own products, we also offer next-day mainland delivery on a wide selection of fresh fish from our partners Blyd ‘O’ It. The fish is delivered straight to your door ready to eat or freeze in eco-friendly packaging, using wool as a natural insulator.
